It's a long, long time since I had one, but when I did this recipe, I was reminded a little of fried egg sandwiches. I've noticed before that tofu can taste like eggs (how about scrambled tofu on toast for breakfast?). But, maybe I'm just peculiar and it doesn't taste like eggs at all. Try it and see what you think. I'm sure you'll agree tofu sandwiches taste good anyway.
This recipe came about when I was putting together a quick snack from an almost empty fridge. It was the day before we set off travelling and I was trying to use up all the food that was left. There was a big wedge of tofu and not much else. There was also some bread in the cupboard. I've always got a load of seasonings lying around so with a wee dash of this and a wee sprinkle of that, I soon had a nice hot snack ready.
This only takes a few minutes.
Ingredients
A chunk of tofu
A couple of tablespoons of flour
Some red chilli powder
Some dried basil
Salt
Oil
Bread
Margarine/butter
Bread
Ketchup and/ or lemon or lime juice
Spread the flour on a plate and then sprinkle some salt, chilli powder and basil on top. Slice the tofu into slices about a centimetre thick and dust them in the flour mix. You can sprinkle on more salt and spices after doing the first few slices if you want.
Fry the tofu pieces in hot oil for a couple of minutes each side, then lay on pieces of buttered bread. Add a few drops of lemon juice to each slice and serve with ketchup as an option.
